I like pesto with fresh tomatoes but not cooked tomatoes. Cooked tomatoes seem to overwhelm the pesto flavor.

I am making pesto for hte first time this year, when the basil is big enough. I can't wait to start using it! It will make excellent spaghetti or lasagna sauce mixed with my canned tomatoes from the garden!

You have inspired me! I make pesto and store it in ice cube sizes. But That lasagna sounds so good, I may have to package some pesto in 1 cup packages.

I found this post - loved it! I so agree with you about the canning. I love Pesto and wondered what would be a good recipe. I was delighted to see you use Jane Brodys' Book - This is one cookbook I actually read cover to cover and still use. I am also a cold climate gardener, cook, blogger - Gloria

I made some pesto over the weekend. Yum! I'm lactose intolerant so no cheese in mine and I used almonds instead of walnuts, which seemed to work OK.
